Fried Parmesan Potato Poppers
Here’s one I look forward to making some day. Who knew you could take mashed potatoes, Provolone cheese and a
little Parmesan cheese and make something like this!
4 cups cold mashed potatoes
2 eggs
1/2 cup grated Parmesan cheese
2 teaspoons dehydrated chopped onion
8 ounces provolone cheese cut in ¼ inch cubes
1 cup fine dry bread crumbs
1 quart vegetable oil for deep frying
In a large bowl, combine your mashed potatoes, eggs, cheese, salt and pepper, and onion flakes. Form mixture into balls of the desired size and push a cube of cheese into the center, encasing it completely in the mashed potato mixture. Dredge in the bread crumbs, coating completely.
Pour oil 1/2 inch deep in a large, heavy skillet. Heat oil over medium-high heat. Fry the balls until they are light golden brown and serve hot.
