Cheesy Potato Cups

Cheesy Potato Cups

This recipe seems like fun.  Cheesy potato cups!

6 large baking potatoes (4-3/4 lb.)
1/3 cup  butter or margarine
3 Tbsp. milk
1 pkg. (8 oz.) Cheddar Cheese, cut into 1-inch cubes
2 Tbsp. bacon bits
12 broccoli florets

Heat the oven to 350°F. Pierce potatoes with a fork and bake for 1 hour.  Once done, let potatoes stand for several minutes. Then cut your potatoes in half crosswise and scoop out centers, leaving 1/8 inch-thick shells.

Next, place potatoes in a large bowl and add butter and milk.  Then beat with electric mixer on medium speed until fluffy.  Spoon evenly into your shells the potatoes -  lightly press 1 cheese cube into the center of each potato. Place potatoes into muffin pan.

To finish, bake for 30 minutes or until heated through. Sprinkle each with 1/2 tsp.of bacon bits and top it off with broccoli.
