Cheddar-Onion Brown Rice
1 cup whole grain brown rice
2 cups water
1/2 teaspoon salt
1 cup (4 oz.) shredded cheddar cheese
1/2 cup thinly sliced green onion (with some green)
1/4 teaspoon freshly ground pepper
Stir together rice, water and salt in a heavy saucepan; bring to boil. Reduce heat to low and cover. Simmer until all liquid is absorbed (about 45 minutes). Remove from heat and let stand covered for about 5 minutes. Stir in shredded cheddar cheese, green onion and pepper. Cover and let stand 5 minutes to melt cheese.
